Horse were, of course, of utmost important to the military of the time.
This is a subject that really deserves a book of it's own.
Unfortunately, I'm not aware of one. Perhaps you (or one of you??) will write it.
My hunch is that for the Americans, it was a case, as with other things, of taking what you could get.
In some cases, what they could get was very good indeed. The ia planters, of Cavalier stock, had been busy developing the American Quarter Horse, which would have been ideal for dragoons and light horse.
It seems to me the British had rather a hard time obtaining suitable mounts, at least in the later, Southern part of the war.
You might want to consider contacting a dragoon or light horse reenactment group. Reenactors are often real sticklers for authenticity, and are likely to be able to point you toward accurate sources of information.
BTW, did you know George Washington is the father of the American mule?
