Nietzsche does talk on education even if briefly and, as the last poster correctly pointed out, unsystematically. He speaks of education in Twilight of the Idols. I have neither the memory nor yet the patience to point out the exact chapter, but it's towards the end of the book, or towards the beginning.
He speaks mainly of teaching children to listen and watch - to hone their sense perception basically, and specifically to teach good judgement. He also spurns the systems which force rs, even in their late teens, to choose their professions or careers - he sees this as something to do much later, also because he seems to be against educating-for-profession, and more for educating-for-quality.
In Zarathustra, he also speaks of marriage as being worthy only in its creative sense - firstly, in procreating and secondly in creating and directing the child's mind and body into a possible ubermensch. He says that beyond this end, marriage could even be harmful.
