The UCC is only applicable directly to contracts for the sale of goods. Also, I don't think he can unilaterally change your terms -- you offered the check, I'm assuming, in a good faith attempt to settle the matter. His acceptance of your check with your terms -- i.e. "Payment in Full" -- probably binds him to those terms.
Stick to your argument. The fact that you'd told him ahead of time, he said "he'd think about it," and then cashed the check is persuasive.
